Yes, coffee has a character! Actually, they have more than one characters so in order to enjoy them (and to understand the “coffee nerds” out there), we will help you to understand more of the characteristics and flavours of coffee… Shall we?

 

Normally we will describe the characteristics of coffee in 4 areas;

  1. Aroma
  2. Acidity (brightness)
  3. Body
  4. Flavour 

 

Aroma is the smell of coffee. Aroma of coffee relates directly to the flavour of the coffee itself but it’s very distinctive and complex to define. Without aroma, you might define the flavour only as sweet, sour, salty or bitter but aroma needs more complex skill to detect that is the sense of smell. You normally define coffee aroma as flowery, earthy, herby, smoky, fruity, nutty, chocolaty, etc. 

 

Acidity (brightness) is not the same as the sour taste you get when you drink the industrial roasted coffee. The good coffee needs balanced acidity to give them another complexity of the taste. The acidity of coffee is natural and it brings brightness, clean taste to your palate and stays longer in your mouth. Without acidity, coffee will taste flat.

 

Body is the feeling you have in your mouth when you drink something. It might be heavy, thick, or light. Imagine you have water or milk in your mouth, you would feel differently and coffee has that body characteristic as well. You will feel light on your tongue when drinking light-bodied coffee and its flavour will not stay long. But when you drink the full-bodied coffee you will feel more weight on your tongue and its flavour will remain in your mouth for a while.

 

Flavour is the sensory impression you get when drinking coffee. It is determined primarily by the chemical senses of aroma, acidity, and body. The five basic tastes are sweet, sour, bitter, salty and umami (savory) but the number of food aroma is unbounded.
